Discreet nose at first glance then, after aeration, the fruit expresses itself, hesitating between citrus fruits then the warm stone aspect in the base of the nose.
Playful palate with fleshy texture. The creamy mid-palate reveals a discreet aromatic at this stage. The whole thing is comfortable and requires a little patience to offer all its fullness. The style of this wine reflects the identity of the place (clay-limestone soil), the verve of the Sauvignon grape variety and the passion of its youth.

Intense and expressive aromas of white flowers, notes of citrus. One can immediately sense the minerality and freshness of this wine.
Its direct and delicate taste allow the prevalence of fresh citrus to culminate in a salient and salivating finale.
It is recommended to open the bottle 1 to 2 hours before tasting and to serve it at a temperature of around 10/12°.

This bottling was selected with the help of older local winemakers. This wine was produced and developed following the tradition of Sancerre wine making.
Vinification
The winemaker was able to produce an extreme balance with a result « à mi-chemin*». This vintage comes from a locality called « Les Bouloises » on a flint soil.
No-filtered, the wine is bottled directly from the barrel.

Les vignes de Chavignol

A dashing wine, with relatively runny tears and a dark ruby color. The nose is refined and discreet. Fine reduction (meat juice), then aeration releases its fruity tones (black berries). A spicier, finely larded nose with a hint of wood.

The palate is welcoming, with a creamy feel and surprising roundness. The tannins are pretty, but seem attenuated by ageing. The wine is comfortable, refined and full of promise…

Closer to the land, charcuterie from our grandmothers, terrines, and game dishes, with cranberries, in sauce, and rare red meats. Foie gras, and terrines in jelly, eggs in jelly, aspics.

Ageing potential

It’s well worth waiting a few months for. Ideally, waiting 3 to 5 years will give him more time to skate. It will reveal itself wonderfully after 5 years, reaching its peak around 7 to 10 years.

Vintage

Bottle upright the day before, open in the morning for a snack, or in the evening for lunch the following day. Let the wine take its place at its own pace.
